Raw Hazelnut Milk recipe

In America I bought a HUGE bag of hazelnuts (something I can never find in England!) and decided I would use some to make my own (first) nut milk! I thought it was going to be quite hard, but like everything in cooking, it turned out to be pretty simple. I used a juicer to make the milk, but you can also use a blender as well (although the method is a bit different).

Ingredients

  • 120g of raw, whole hazelnuts (pre-soaked overnight)
  • 1 litre of cold water

Method 1 (with a juicer)

  1. First (if you haven't already done so) soak the hazelnuts overnight. The next morning/ day pour out the water and rinse the hazelnuts in cold, clean water.
  2. Put 1 tbs of hazelnuts in the juicer followed by around 100ml of water. Repeat this step until you have juiced all the hazelnuts.
  3. Get another jug and put it under the juicer spout. In the jug put a nut bag, so that any hazelnut mush gets caught in the next step.
  4. Pour the milk back into the juicer and let it run out into the bag with the nut bag inside it.
  5. Bring out the nut bag to let the milk strain through into the jug, whilst squeezing it to get the milk all out. There should be a little bit of hazelnut mush left in the bag when you finish squeezing.
  6. Store your nut milk in an airtight jug in the fridge and drink within 6 days

Method 2 (with a blender)

  1. First (if you haven't already done so) soak the hazelnuts overnight. The next morning/ day pour out the water and rinse the hazelnuts in cold, clean water.
  2. Put all the hazelnuts into your blender with the water and blend for around 2 mins on full power
  3. While the hazelnut milk is blending prepare a jug with a nut milk bag inside it
  4. Pour into the jug (so into the nut milk bag) the contents of the blender. Bring out the nut milk bag from the jug and squeeze it to get ALL the milk out into the jug. Just keep squeezing until the pulp inside the nut milk bag is DRY.
  5. Store your nut milk in an airtight jug in the fridge and drink within 6 days.
You can use the hazelnut pulp in many different ways. You can dry it out in a dehydrator or oven for around 4 hours on a low heat, blend it up and use it as flour.

Rainbow Revive Juice

This juice looks so beautiful when you make it and is soooooo good for you when you drink it! I included as many good vegetables as I could to make this juice a super revive and energising drink while getting in all the vitamins and good things that you need.

Look how beautiful it is!

When you mix it all together it makes a pretty pink juice!

Ingredients

(Serves 1 - 2)
  • 4 large carrots
  • 1 pear
  • 1 apple
  • 1 beetroot
  • 1/2 a lemon/ lime
  • 1/2 - 1 celery stalk
  • 1 handful of spinach
  • 1 inch cube of fresh ginger
  • 1/4 of a cucumber

Method

  1. Put all ingredients through the juicer (make sure you wash the vegetables). IF you are going to make my vegan burgers then make sure you add the ginger and lime/ lemon last. Take out the pulp from the other veg and save it before you run the ginger and lemon/ lime through. You don't want gingery or limey/ lemony burgers! If you are making the carrot cake or muffin bites then only conserve the pulp that you need, i.e run the carrots through first and collect the pulp in a separate container for the carrot cake.
  2. If you want the separated, rainbow colour effect put the glass straight under the juice feed so that the juice goes straight into it.
  3. Enjoy :)

Cleansing Carrot and Cucumber juice

This juice was supposed to be part of my juice cleanse - although I haven't been very good at it and have craved and given in to eating solid food - maybe I need a bit longer to store up enough will power! However even though I haven't been totally juicing, I have been juicing! So here is one of my juices that will cleanse your body...

So I read up about what is really good for you in a juice and this is what I found:

  • Cucumber juice: Helps your skin, hair and nails as it helps draw the dirt from your pores. Also it contains minerals that help strengthen your nails. As it is mostly water it is great at cleansing toxins from your body. Most importantly in the juice there is important compounds that help block the development of cancer cells inside your body.
  • Carrot juice: Detoxes the liver meaning that your whole body benefits!
  • Celery juice: Richly dense in minerals and vitamins (like Vitamin A and B) It also lowers cholesterol and blood pressure. It is very good at restoring the pH balance in the body which is needed for good health.
  • Lemon juice: VERY good for your skin - it cleanses the body and helps your skin be RADIANT ! It is rich in anti-oxidents and can help prevent heart failure.

Ingredients

  • 4 large carrots
  • 1/2 a large cucumber
  • 1 - 2 celery stalks
  • 1 green apple
  • 1 lemon (I would peel it before juicing but for a stronger lemon flavour then leave on the peel)
  • Optional: Ice cubes

Method

  1. Wash and cut of tops of the carrots and put through the juicer. Collect the pulp as you can use it in cooking, baking and salads. (Use it for this Carrot Cake recipe)
  2. Put all the other ingredients into the juicer. Add ice when you serve it.
  3. Enjoy (hopefully) - if you don't like the taste just remember all the good things it is doing for you!

Super Duper Fothy Frappuccino

I had this Frappuccino for breakfast this morning and...

IT. WAS. SO. DELICIOUS.

I would say BETTER than the Starbucks version as I found it both more filling and not as sickly.

I. LOVE. IT (Ok I will stop with the caps lock and full stop thing now! :) I think I have got across how good it is).

Both creamy, sweet, icy and perfection for breakfast. I highly recommend trying it!

If you are not convinced already hopefully you will be by these photos I snapped before I gulped it down!

I am quite proud of these pictures - as you may be able to guess as I uploaded so many haha! :)

Super Frothy Chocolate Milkshake

This is a delicious morning milkshake that will stop you ever wanting or craving a 'real' one (not that this one isn't real also!). It froths at the top if you use a vitamix or other powerful blender!

Already have drunk some...oops! Sorry had to do a quick taste test beforehand!

Ingredients

  • 200ml - 300ml (depending on how large you want it to be) of non-dairy milk (I used unsweetened almond milk)
  • 1 frozen banana (I would cut up into coins before putting in the freezer to make it easier to blend
  • Handful of raisins / 2 to 3 chopped dates
  • 1 1/2 tbs of cocoa powder
  • 1/2 tbs of carob powder
  • 1 packet of truvia
  • Optional: 1 tbs of nut butter (for an extra creamy protein shake)
  • Optional: 1 tsp of vanilla essence
  • Optional: Chocolate sprinkles (vegan kind of course!) / raw cacao nibs

Method

  1. Put all ingredients in a high power blender and blend until completely smooth (around 30 seconds)
  2. Pour into a glass and top with chocolate sprinkles / cacao nibs
  3. Slurp away!

BEST EVER Sweet and spicy chai milkshake!

I absolutely love chai tea (you know the unhealthy non-vegan one from Starbucks - it is to die for!) So I decided to make a rich and creamy vegan chai milkshake to stunt my cravings. To be totally honest, I think I now prefer this one! It is so creamy and delicious it completely stopped me wanting the Starbucks one!

Ingredients

  • 1 Frozen and VERY ripe banana (make sure it is very ripe otherwise it won't be as sweet)
  • 150ml of your favourite non-dairy milk (I used unsweetened almond milk and it was great!)
  • 1 packet stevia/ 2 packets of trivia
  • 2 drops of liquid stevia (or 1 1/2 tsp of maple syrup / honey)
  • 3/4 tsp of ginger
  • 3/4 tsp of cinnamon
  • 1 cardamon pod
  • 1/2 of a clove (I know it sounds so little but a clove is really strong!)
  • 1/2 tsp of ground nutmeg
  • 1/2 tsp of vanilla extract
  • Optional: Cinnamon stick for serving

Method

  1. Blend all ingredients for around 2 mins in a high powered blender until completely smooth
  2. Pour into a glass a drink up!

Coolingly Creamy Coco-shake

This is my favourite coco-shake (like a milk shake but made with coconut milk!), I used it as my breakfast before squeezing into my prom dress (which I decided to make myself!) and it was so light but so filling so I didn't have feel like I needed to eat before my big night!

For this coco-shake you will need to buy LIGHT coconut milk, and make sure that it has added emulsifier otherwise you won't get a smooth creamy consistency and it will be all bitty (trust me I have made that same mistake!) You will also need to make some of my fruit syrup, as it is one of the main ingredients in the shake.

I made this strawberry powder in my dehydrator, which is so pretty to put on top of this drink and other sweet things like desserts etc. I am so excited by finding different ways to use it! If  you have a dehydrator at home then what you need to do is:
            1. Chop a whole packet of strawberries thinly into slices (it needs to be a whole packet as they shrink in the dehydrator)
            2. Put them into the dehydrator overnight (around 8 - 12 hours depending on your areas humidity)
            3. Blend the dried strawberries in a bullet blender (or just a normal blender) until they are a powder
            4. Enjoy! Sprinkle on top of your favourite coco-shakes and desserts! :)
Isn't it so pretty? :)

Coolingly Creamy coco-shake with strawberry sprinkles on top!

Ingredients

(serves 1)
  • 1/3 can light coconut milk
  • 50ml of fruit syrup
  • 100ml of non-dairy milk (oat milk or almond milk is the best)
  • Optional: 1/2 tbs of honey/ 1tbs of maple syrup/ 1 stevia/ truvia packet (However I don't think added sweetness is needed as the fruit syrup is already sweet)

Method

  1. Pour all ingredients in a cup and stir really well - top off with strawberry sprinkles for a pretty effect
  2. If you are using honey or maple syrup which is a bit thicker then you might want to use a blender to mix the ingredients
  3. Enjoy on a nice hot summers day! (If England was ever kind enough to let us have one!)

Chocolate and Banana Milkshake

This chocolate milkshake is thick and creamy, and also perfect for filling you up at breakfast time or a afternoon treat. I made this with frozen banana but you can use fresh banana too, however I like it very cold to enjoy in the summer weather! There is a secret ingredient that might surprise some of you to make it extra creamy and give it a filling taste.... AVOCADO! The avocado is absolutely delicious in this milkshake and gives it an amazing texture that is just as creamy as using real yogurt/milk or ice cream!

Ingredients

(serves 1)
  • 1/3 medium to large hass avocado
  • 1/2 banana (frozen or unfrozen)
  • 1 1/2 tsp of almond butter
  • 150ml - 250ml (depending on how runny or thick you want it) of oat milk (or almond milk but I haven't tried it with this so can't vouch for its flavour)
  • 1 packet of stevia (1tsp)
  • 1tsp of vanilla extract
  • 2tbs of carob powder (or cocoa powder / cacao powder

Method

  1. Chop up the banana and avocado into small chunks (or if using a high power blender like the vitamix then skip this step - I used a bullet however)
  2. Blend the banana, the avocado and almond butter until smooth
  3. Add all other ingredients and blend until completely smooth
  4. Pour into a glass and drink up! (I sprinkled some carob powder on the top of the milkshake to make it look pretty!)

Early Riser Refresher Juice

This juice is exhilarating and perfect for 'early morning blues' (which I get a lot as I have to wake up at 6:30am to get to school - it's early for me!) It is seriously refreshing because of the lime and perfect for anyone who is trying not to drink soft drinks like limeade! I absolutely love this juice and find it will fill me up until lunch, whilst still being quite light! You do need a juicer to make this, however I will post a smoothie version for those who don't have one (don't worry you still will be able to share in the fun!)

Yes it is an odd colour, but believe me it tastes amazing!

Ingredients

(Serves 1 - 260ml)

  • 3 medium to large carrots (if you have small ones use 4-5)
  • 1 lime (if you are less of a limey person peel it)
  • 1 pear
  • 1 apple
  • 1 slice of fresh ginger
  • A handful of romaine lettuce
  • Optional (for super healthy people!): 1tbs of coriander and parsley, 1/2 - 1 stalk of celery, 1 beetroot (which will make it a lovely purple colour!)

Methods

  1. Put all of the ingredients in the juicer
  2. Mix it up and serve in a glass
