Ingredients
(Serves 2-3)
- 1/2 tbs of apple cider vinegar
- 250g of maize flour
- 1tsp of baking powder
- 1/2 tsp of sea salt
- 1/4 tsp of baking soda
- 2tsp of xylitol
- 1 packet of truvia or stevia
- 60g of sweetcorn (cooked - after you cook them you can place them in a food processor to make them into a paste - however I prefer using them whole!)
- 5 tbs of coconut oil (melted)
- 1 very ripe small banana
- 250ml of oat milk (or enough to make a wet dough)
Method
- Preheat the oven to 200 degrees celsius and grease a shallow baking dish with coconut oil
- Mash up the banana or blend it in a food processor to make it into a paste
- Mix the vinegar and oat milk and place to one side
- Mix all the dry ingredients
- Add the wet ingredients and the sweetcorn to the milk and vinegar mix
- Then add the wet ingredients to the dry ingredients and mix very well
- Place the wet dough into the greased shallow dish and bake in the oven for 20-25 mins (or until golden coloured on the top)
